What You’ll Need
Here is what you’ll need to make these healthy brownie cookies:
- Banana: The main source of sweetness for these cookies. Be sure to use a banana that is overripe with several brown spots. The riper the banana, the sweeter the cookies!
- Peanut Butter: For added flavor and texture in these cookies.
- Oat Flour: For added structure to help the cookies hold their shape. If you don’t have oat flour on hand, simply blend up some old-fashioned rolled oats into a flour consistency!
- Unsweetened Cocoa Powder: For that chocolatey flavor!
- Maple Syrup: For a touch of added sweetness to the cookies.
- Chocolate Chips: Optional addition for added sweetness and more chocolate flavor.
See the recipe card below for full information on ingredients and quantities.
Ingredient Substitutions & Additions
- Peanut Butter: The peanut butter adds subtle flavor and fats and can be replaced with almond butter, or sunflower seed butter for a nut-free option.
- Oat Flour: The oat flour may be replaced with 1/2 cup of almond flour.
- Maple Syrup: The maple syrup may be replaced with honey (if serving to a child over the age of 1) or date syrup. It may also be omitted completely!
- Chocolate Chips: The chocolate chips may be replaced with finely chopped nuts for added texture and crunch!
Step By Step Instructions
STEP 1: Line a baking sheet with parchment paper and set aside. Add the banana into a bowl and mash it with a fork until smooth.
STEP 2: Add in the peanut butter, maple syrup, oat flour, and cocoa powder and mix until well combined. Stir in the chocolate chips until incorporated.
STEP 3: Scoop out 1 tablespoon-sized portions onto the prepared baking pan lined with parchment paper leaving at least 1 inch of space in between each cookie. Sprinkle with extra chocolate chips/sprinkles or mini chocolate chips if desired.
STEP 4: Bake the cookies for 10 to 12 minutes, or until dry to the touch. Let the cookies cool completely before removing them from the pan. They will be very soft-textured at first and will slightly firm up as they cool.
Storage Instructions
These cookies can be stored in an airtight container at room temperature for up to 1 day or in an airtight container in the fridge for up to 4 days.
Tips For Success
- These brownie cookies are meant to be soft and fudgy. If you prefer something a little thicker consistency, try adding a little more oat flour to the batter.
- The cookies will be very soft-textured at first and will firm up slightly as they cool.
- Use an overripe banana for more sweetness. Taste the batter before baking to see if you like the taste (since the batter does not contain eggs, it is safe to taste raw). Add in a little extra maple syrup, chocolate chips, or top with mini chocolate candies if you prefer more sweetness.
- If you’re making your own oat flour by blending up rolled up, I recommend passing it through a fine mesh sieve to ensure that it is as smooth as possible with no large chunks of oats.
- The cocoa powder does contain some caffeine, so be mindful of that when deciding whether to serve to a younger child.
Recipe FAQs
These cookies are soft-textured and almost melt in your mouth with every bite. Make sure to scoop out tablespoon-sized portions of batter so that the cookies are small in size when baked and not flimsy when held.
Chocolate chips are a classic, but things like mini chocolate-covered candies, finely chopped nuts, and crushed pretzels are great additions!
