- 1 large overripe banana
- 2 tbsp natural peanut butter
- 1 - 2 tbsp maple syrup
- ⅓ cup oat flour
- 1 ½ tbsp unsweetened cocoa powder
- ¼ cup chocolate chips/sprinkles optional for added sweetness
Preheat the oven to 350 degrees F (180 degrees C). Line a baking sheet with parchment paper and set aside.
Add the banana into a bowl and mash it with a fork until smooth.
Add in the peanut butter, maple syrup, oat flour, and cocoa powder and mix until well combined. Stir in the chocolate chips until incorporated.
Scoop out 1 tablespoon-sized portions onto the prepared baking pan lined with parchment paper leaving at least 1 inch of space in between each cookie. Sprinkle with extra chocolate chips/sprinkles or mini chocolate chips if desired. Bake the cookies for 10 to 12 minutes, or until dry to the touch. Let the cookies cool completely before removing them from the pan. They will be very soft-textured at first and will slightly firm up as they cool.
- These brownie cookies are meant to be soft and fudgy. If you prefer something a little thicker consistency, try adding a little more oat flour to the batter.

- Use an overripe banana for more sweetness. Taste the batter before baking to see if you like the taste (since the batter does not contain eggs, it is safe to taste raw). Add in a little extra maple syrup, chocolate chips, or top with mini chocolate candies if you prefer more sweetness.
- If you're making your own oat flour by blending up rolled up, I recommend passing it through a fine mesh sieve to ensure that it is as smooth as possible with no large chunks of oats.
- The cocoa powder does contain some caffeine, so be mindful of that when deciding whether to serve to a younger child.
