This easy turkey pesto sandwich tastes just like the popular Costco favorite, but made right at home with simple ingredients. It comes together fast, is packed with so much flavor, and is perfect for a quick lunch or dinner.

I used to love the Costco turkey provolone sandwich, and it was my go-to lunch anytime I made a Costco run. Then it disappeared for a while, and I was so disappointed because nothing else really hit the same. They eventually brought back a version of it, but it just doesn’t taste like the original I remember. That’s what inspired me to try and recreate it at home, and this version is the closest I’ve come to that original sandwich.
This turkey pesto sandwich is one of those super simple meals that tastes like something you grabbed from a deli. It’s a homemade version of the original Costco turkey pesto sandwich, and honestly, it is SO good. Turkey slices, juicy tomatoes, red onion, melty provolone cheese, and the most delicious creamy pesto mayo spread are all baked together on a ciabatta bun for a warm, crispy sandwich that is packed with flavor.

What You’ll Need
Here is what you’ll need to make these turkey pesto sandwiches:

- Ciabatta/Aritsan Rolls: These get perfectly crispy on the outside while staying soft in the middle.
- Turkey Slices: Use your favorite deli turkey slices!
- Tomatoes: Add some freshness and juiciness to balance everything out.
- Provolone Cheese: Melts so well and gives these sandwiches that classic deli sandwich taste.
- Red Onion: Thinly sliced for a little crunch and flavor.
- Pesto: This adds so much flavor and is what gives these sandwiches that Costco copycat taste. I used the Kirkland brand pesto, but you can use your favorite brand or a homemade pesto.
- Mayonnaise: Mixed with the pesto to make a creamy spread for the bread.

Ingredient Substitutions & Additions
- Bread: Ciabatta is my favorite for these, but any sandwich rolls or even focaccia would work.
- Cheese: Mozzarella, Swiss, or white cheddar can all work here. You can also swap with dairy-free cheese.
- Turkey: You can also use sliced chicken or ham.
Step-by-Step Instructions

STEP 1: Preheat the oven to 400°F. In a small bowl, stir together the pesto and mayo until smooth (Images 1 & 2).
STEP 2: Slice the ciabatta rolls in half and spread the pesto mayo mixture onto both sides of each roll (Image 3).
STEP 3: Add 4 turkey slices to the bottom halves of each bread roll, and place the tomato slices on the top halves of the bread (Image 4).

STEP 4: Top the turkey with the sliced red onions and place the provolone cheese slices over the tomatoes (Image 5).
STEP 5: Place all of the sandwich halves on a baking sheet and bake for 10 minutes, until the bread is toasted and the cheese is melted (Image 6).
STEP 6: Remove from the oven, place the tops onto the bottoms, and serve warm.
Storage Instructions
These sandwiches are definitely best served fresh and warm, but leftovers can be stored in an airtight container in the fridge for up to 2 days. To reheat, pop them back into the oven or air fryer for a few minutes until warmed through. I would avoid microwaving because the bread can get soft. If preparing ahead, you can assemble the sandwiches (without tomatoes) and store them covered in the fridge, then add the tomatoes just before baking.

- Use fresh bread. Ciabatta rolls with a good crust will give you the best texture once baked.
- Slice ingredients evenly. Thin, even slices of onion and tomato help everything cook and layer properly.
- Bake open-faced. This helps the cheese melt perfectly and prevents the sandwich from getting soggy.
