Step-by-Step Instructions

STEP 1: Heat the olive oil in a skillet over medium heat. Add the riced cauliflower and cook for about 5 minutes, stirring occasionally, until softened and most of the moisture has evaporated (Images 1 & 2). Transfer to a plate and let it cool.

STEP 2: In a large bowl, combine the cooked cauliflower, ground chicken, panko breadcrumbs, Parmesan cheese, garlic powder, onion powder, paprika, and salt. Mix just until everything is evenly combined (Images 3 & 4). Avoid overmixing, because it can make the nuggets dense.

STEP 3: In one shallow bowl, stir together the panko breadcrumbs, Parmesan cheese, and flour (Image 5). In a second shallow bowl, whisk the eggs (Image 6).

STEP 4: Scoop 1 tablespoon of the chicken mixture and place it directly into the panko mixture (Images 7 & 8). Gently press and shape it into a nugget while coating all sides with the breadcrumb mixture. Repeat with the remaining chicken mixture.

STEP 7: Bake at 425°F for 18–20 minutes until crispy, golden, and cooked through (Image 12).

Storage Instructions

Once cooled, store the nuggets in an airtight container in the refrigerator for up to 4 days. To reheat, warm them in a 350°F oven or air fryer for 5 to 7 minutes, until heated through and crispy again. To freeze, allow the cooked nuggets to cool completely before transferring them to a freezer-safe bag or container. Freeze for up to 3 months. You can reheat directly from frozen in a 375°F oven or air fryer for 12 to 15 minutes.
