Turkey Pesto Sandwich

This easy turkey pesto sandwich tastes just like the popular Costco favorite, but made right at home with simple ingredients. It comes together fast and is packed with so much flavor, and is perfect for a quick lunch or dinner.

Ingredients

  • 3 ciabatta rolls
  • cup pesto sauce
  • 3 tbsp mayo
  • 12 slices deli turkey breast
  • 3 slices provolone cheese
  • 1 large tomato sliced
  • ¼ red onion thinly, sliced

Instructions

  • Preheat the oven to 400°F. In a small bowl, stir together the pesto and mayo until smooth.
  • Slice the ciabatta rolls in half and spread the pesto mayo mixture onto both sides of each roll.
  • Add 4 turkey slices to the bottom halves of each bread roll and add the tomato slices to the top halves of the bread.
  • Top the turkey with the sliced red onions and place the provolone cheese slices over the tomatoes
  • Place all of the sandwich halves on a baking sheet and bake for 10 minutes, until the bread is toasted and the cheese is melted.
  • Remove from the oven, place the tops onto the bottoms, and serve warm.

Notes

  • Use fresh bread. Ciabatta rolls with a good crust will give you the best texture once baked.
  • Slice ingredients evenly. Thin, even slices of onion and tomato help everything cook and layer properly.
  • Bake open-faced. This helps the cheese melt perfectly and prevents the sandwich from getting soggy.
