Pizza bagel bites were definitely a staple in my childhood and I vividly remember popping a few in the toaster midday for a quick lunch. Something about the combo of the chewy bagel and cheesy topping always hit the spot. But I’m here to tell you that homemade bagel bites taste SO much better than storebought and are so simple to make! Recreate the nostalgia of classic store-bought bagel bites with this recipe you’ll find yourself making again and again!

What You’ll Need

Here is what you’ll need to make these homemade bagel bites:

Ingredients to make homemade bagel bites.
  • Self Rising Flour: The main base of the dough. If you don’t have self-rising flour, you can make your own by combining all-purpose flour, baking powder, and salt (see below)!
  • Greek Yogurt: Makes the dough soft and pliable, making it easy to roll out. 
  • Melted Butter/Oil: Brushed on top of the bagel bites for a golden color and slightly firm crust. You can also use an egg wash for a shinier crust.
  • Pizza Sauce: Use a good quality pizza sauce since this is the base for the mini bagel bites.
  • Mozzarella Cheese: Sprinkled on top of the pizza sauce. Mozzarella sauce is classic for that pizza flavor, but feel free to swap this with your favorite cheese blend!
  • Toppings: I used chopped pepperoni for that classic mini bagel bite look, but you can use any of your favorite toppings! Make sure to finely chop up the toppings so that they easily stick to the bites.

Ingredient Substitutions

  • Self-Rising Flour: No self-rising flour? No problem! You can make your own by mixing together 2 cups of all-purpose flour, 3 teaspoons of baking powder, and 1/2 teaspoon of salt. Once that is mixed together, measure out 1 3/4 cups to use in this recipe. To make these bagel bites gluten-free, use gluten-free all-purpose flour in a 1:1 ratio.
  • Greek Yogurt: I used full-fat milk Greek yogurt, but you can swap this out with dairy-free Greek-style yogurt. If using dairy-free, try to use yogurt that is thick in texture and not thin which will be very difficult to work with.
  • Butter/Oil: Feel free to swap this with an egg wash for a shinier crust.

Step By Step Instructions

Steps to make homemade bagel bites.

STEP 1: Add the self-rising flour and Greek yogurt to a bowl and mix it with a fork until it becomes crumbly in texture. Use your hands to knead the dough for a few minutes until it comes together into a ball. It will seem very dry initially, but continue mixing and kneading with your hands until the flour is incorporated and a dough ball is formed (Images 1 & 2).

STEP 2: Sprinkle a little flour on a surface and place the dough ball on top (Image 3). Use a knife to split the dough ball into 12 equal pieces (Image 4).

STEP 3: Take one sliced piece of dough and roll it into a thin log that is about 5 inches in length (Image 5). Bring each end of the dough together and pinch them together to seal it to form a mini bagel shape (Image 6). Repeat for the remaining mini bagels.

STEP 4: Place the mini bagels on top of a parchment paper-lined baking sheet. Brush all sides of the mini bagels with the melted butter/oil/egg wash (Image 7). Bake the bagels at 350 degrees F for 20 to 24 minutes, until firm to the touch and lightly golden (Image 8). They may seem light in color at first, but will slightly darken as they begin to cool. Keep in mind that the bites will bake again in the oven with the toppings.

Steps to make homemade bagel bites.

STEP 5: Once baked, remove the mini bagels from the oven, let them cool, and increase the oven temperature to 425 degrees F. Once cooled, slice each bagel in half horizontally and place the halves on a lined baking sheet (Image 9).

STEP 6: Add one teaspoon of pizza sauce on each bagel half and smooth it out to coat the bagels (Image 10). Top each mini bagel with grated mozzarella and toppings of choice (Images 11 & 12). Once the oven is preheated up to 425 degrees F, bake the bites for 8 to 10 minutes, or until the cheese is fully melted. Let the bites cool completely before serving.

Storage Instructions

These homemade bagel bites can be stored in an airtight container in the fridge for up to 5 days. They can also be frozen in a freezer-safe container or bag for up to 3 months. Reheat them in the air fryer at 350 degrees F for 3 to 5 minutes, or until heated through.

Tips For Success

  • You’ll need to use your hands to knead the dough into a ball. It will seem dry at first but will come together into a dough. Depending on the type of yogurt you use, the texture may vary but add a little flour or yogurt as needed to get the right consistency.
  • Be careful not to overbake the mini bagels in the oven. They may seem light in color at first, but test a mini bagel by slicing it in half to check for doneness. Once they are fully cooked, remove them from the oven. They will slightly darken once they cool and gain more color once they bake again with the toppings.
  • Use a good quality pizza sauce for these bites since the sauce is the base that provides the main pizza flavor!
