These air fryer veggie egg rolls are a fun way to incorporate veggies into a crispy, savory meal or snack. It’s so easy to make and enjoy the popular take-out appetizer right from home!
Homemade egg rolls are much easier to make than you may think! Egg rolls are typically deep-fried, but this version is air-fried but still maintains that same classic crunch. You can customize the filling with added veggies or sources of protein to make them your own. Enjoy them dipped into a side of sweet chili sauce for the perfect balance of savory and sweet!

What You’ll Need
Here is what you’ll need to make these air fryer veggie egg rolls:
- Egg Roll Wrappers: The base for these egg rolls. Most varieties come in 6.5-inch squares.
- Cabbage/Carrots: The main items for the veggie mixture. I used a box grater to grate the veggies down for the filling. I used the smallest-sized hole for the carrots and the mandoline-style single-slicing hole for the cabbage.
- Soy Sauce: The main source of flavor to season the veggies.
- Onion/Garlic Powder: Seasonings for added flavor.
- Oils: I used a combination of olive oil and sesame oil. Olive oil is used to cook down the veggies and sesame oil is used to add that authentic, subtle flavor.
- Egg: To seal the egg rolls closed before air frying.

Ingredient Substitutions & Additions
- Egg-Roll Wrappers: Spring roll wrappers could be used if you can’t find egg roll wrappers, but since they tend to be a little thinner, I’d recommend reducing the total cook temperature and time.
- Add-Ins: Feel free to add extra grated veggies or added protein sources. Ground pork works well and is oftentimes included in classic egg rolls.
Step By Step Instructions
STEP 1: Heat the olive oil on a large pan over medium heat. Once hot, add the grated cabbage and grated carrots to the pan along with the soy sauce, onion powder, garlic powder, and sesame oil (Image 1). Give the mixture a mix until it is incorporated and let the veggies cook down until wilted, stirring often, about 5 minutes (Image 2).
STEP 2: Once the veggies are softened remove from the heat and allow the mixture to cool. Taste the mixture and add salt if desired.
STEP 3: Place an egg roll wrapper at a diagonal so that one corner is facing you. Place about 3 tablespoons of the mixture in the corner facing you. Wrap that corner fully over the filling, turn both sides over the wrapper and continue rolling it up like a burrito. Once you get to the edge, whisk an egg and brush a small amount of the egg mixture onto the edge of each wrapper to seal it closed (Image 3). Repeat until all of the mixture is used and all egg rolls are formed.
STEP 4: Spray the bottom of the air fryer basket with oil spray and the egg rolls into the basket making sure to leave some space in between them. Spray the top of the egg rolls with a generous layer of oil (this will help with browning) (Image 4).
STEP 5: Air fry the egg rolls at 390 degrees F for 10 to 12 minutes or until the egg rolls are golden, flipping the egg rolls halfway through. Let them cool fully and serve with a dipping sauce of choice (Image 5).
Storage Instructions
These egg rolls can be stored in the fridge in an airtight container for up to 3 days. To freeze, place the egg rolls in a freezer safe ziploc bag and use a straw at one end to suck out as much moisture as possible. They can be frozen for up to 3 months. Reheat egg rolls in the air fryer at the reheat setting, or until warmed through.
Tips For Success
- I like to use a box grater to finely chop up the veggies. I used the smallest-sized hole for the carrots and the mandoline-style single-slicing hole for the cabbage. In a pinch? You can also purchase a package of coleslaw mix to use instead.
- Make sure to keep a damp towel on top of the egg roll wrappers are you are assembling them to prevent them from drying out.
- Make sure not to overfill the egg roll wrappers so that they are not too difficult to roll up. See the images above for how to properly roll up egg rolls.

Yes! You can fry these egg rolls in a pot of oil heated to 350 degrees F. Fry a few egg rolls at a time, turning occasionally until golden on all sides. Place the cooked egg rolls on a paper towel-lined plate to soak up the excess oil.
Yes! You can bake these egg rolls on a parchment paper lined pan at 400 degrees F for 15 to 18 minutes. Be sure to spray the rolls generously with oil to help with browning but note that oven baking will not produce rolls that are as golden and crispy as air fried. Flip the rolls halfway through.
