What You’ll Need

Here is what you’ll need to make these savory carrot waffles:

Ingredients to make savory carrot waffles.
  • Carrots: Finely grate the carrots using the smallest holes on a box grater so they soften properly while cooking.
  • Egg: Helps bind everything together and gives the waffles structure.
  • Shredded Cheese: Adds flavor and helps the waffles crisp up in the waffle maker.
  • Panko Breadcrumbs: Helps absorb moisture to create a better texture.
  • All-Purpose Flour: Adds extra structure so the waffles hold together well.
  • Milk: Helps loosen the mixture slightly so it cooks evenly.
  • Salt, Onion Powder, Garlic Powder, Paprika: For added flavor and warmth. You can omit the salt if you are preparing these for a young baby.

See the recipe card below for full information on ingredients and quantities.

Ingredient Substitutions & Additions

  • Cheese: Cheddar, mozzarella, Monterey Jack, or a Mexican blend all work well. You can also swap it with dairy-free shreds.
  • Panko Breadcrumbs: Regular breadcrumbs can be substituted if needed.
  • Flour: A 1:1 gluten-free flour blend may be substituted.

Steps to make savory carrot waffles.

STEP 1: Preheat the mini waffle maker.

STEP 3: Add the carrots to a bowl along with the egg, shredded cheese, panko breadcrumbs, flour, milk, salt, onion powder, garlic powder, and paprika (Image 3). Stir until fully combined (Image 4).

STEP 4: Lightly grease the waffle maker if needed. Scoop some of the carrot mixture into the center of the waffle maker and gently spread it out slightly (Image 5). You can also scoop a tablespoon of the mixture into the center of the waffle maker for mini waffle bites.

STEP 5: Close the waffle maker and cook until the waffles are golden brown and crisp around the edges, about 4 to 6 minutes depending on your waffle maker and the size of your waffles (Image 6). Repeat with the remaining mixture and allow them to cool slightly before serving so they crisp up more as they sit.

Storage Instructions

Store cooled waffles in an airtight container in the refrigerator for up to 4 days. To freeze, place the waffles in a freezer-safe bag or container for up to 2 months. Reheat in the toaster, air fryer, or waffle maker until warmed through and crisp again.

Tips For Success

  • Make sure to squeeze as much moisture as possible from the carrots before mixing the batter. Excess moisture can make the waffles soft instead of crispy.
  • Use finely grated carrots so they cook through evenly in the mini waffle maker.
  • Do not overfill the waffle maker, or the mixture may spill out as it cooks.
  • Let the waffles cook long enough to become golden and crisp, or until the steam stops, before opening the waffle maker to help prevent sticking.
  • Allow the waffles to cool for a minute after cooking so they firm up slightly and crisp even more.
  • Add about 3 tablespoons of the mixture for larger waffles, or use about 1 tablespoon for smaller waffle bites.

Recipe FAQs

Do I need to squeeze the carrots?

Yes, this step is important! Removing excess moisture helps the waffles get crispy instead of soggy and helps them hold together better in the waffle maker.

Can I make these waffles ahead of time?

Yes! They store and reheat really well. Pop them in the toaster, air fryer, or waffle maker to bring back the crisp edges. I recommend doubling the recipe if you plan on freezing some.
