Savory Carrot Waffles

Soft on the inside with crispy golden edges, these savory carrot waffles are an easy veggie-packed lunch option made right in a waffle maker. They’re cheesy, flavorful, and come together with simple ingredients in just minutes.

Ingredients

  • 1 cup finely grated carrots
  • ½ cup shredded cheese
  • 1 egg
  • 2 tbsp milk
  • ¼ cup panko breadcrumbs
  • 2 tbsp all-purpose flour
  • ¼ tsp salt
  • ¼ tsp onion powder
  • ¼ tsp garlic powder
  • ¼ tsp paprika

Instructions

  • Preheat the mini waffle maker.
  • Finely grate the carrots using the smallest holes on a box grater. Use your hands, a clean kitchen towel, or the back of a spoon pressed over a sieve to squeeze out as much moisture from the carrots as possible.
  • Add the carrots to a bowl along with the egg, shredded cheese, panko breadcrumbs, flour, milk, salt, onion powder, garlic powder, and paprika. Stir until fully combined.
  • Lightly grease the waffle maker if needed. Scoop some of the carrot mixture into the center of the waffle maker and gently spread it out slightly. You can also scoop a tablespoon of the mixture into the center of the waffle maker for mini waffle bites.
  • Close the waffle maker and cook until the waffles are golden brown and crisp around the edges, about 4 to 6 minutes depending on your waffle maker and the size of your waffles. Repeat with the remaining mixture and allow them to cool slightly before serving so they crisp up more as they sit.

Notes

  • Make sure to squeeze as much moisture as possible from the carrots before mixing the batter. Excess moisture can make the waffles soft instead of crispy.
  • Use finely grated carrots so they cook through evenly in the mini waffle maker.
  • Do not overfill the waffle maker, or the mixture may spill out as it cooks.
  • Let the waffles cook long enough to become golden and crisp, or until the steam stops, before opening the waffle maker to help prevent sticking.
  • Allow the waffles to cool for a minute after cooking so they firm up slightly and crisp even more.
  • Add about 3 tablespoons of the mixture for larger waffles, or use about 1 tablespoon for smaller waffle bites.
