What You’ll Need
Here is what you’ll need to make these mango cherry popsicles:

- Frozen Mangoes: Naturally sweet, creamy when blended. I prefer using packaged frozen mangoes because they’re frozen at peak sweetness and blend into the perfect texture.
- Frozen Cherries: For a tart contrast, added sweetness and fun swirl color.
- Apple Juice: For added sweetness and flavor. Use 100% apple juice with no added sugar.
- Maple Syrup: Optional for added sweetness.
- Lime Juice: brightens and balances the flavor

Recipe Substitutions & Additions
- Apple Juice: Apple juice can be replaced with orange juice, pineapple juice, or coconut water.
- Maple Syrup: The maple syrup may be replaced with equal parts honey. You can also omit it depending on the sweetness of your fruits.
Step-by-Step Instructions

STEP 1: Add the mangoes, apple juice, maple syrup, and lime juice to a high-powered blender and blend until completely smooth (Images 1 & 2). You’ll want to blend it well to ensure that all of the mango chunks are fully broken down and smooth. Pour this mixture into a medium bowl.
STEP 2: Add the cherries and remaining apple juice to the blender and blend until smooth and no cherry chunks remain (Images 3 & 4). Pour this mixture into the same bowl as the blended mango (Images 5 & 6).

STEP 3: Use a toothpick or a knife to gently swirl the blended cherries into the blended mango mixture (Image 7). Be careful not to overmix so that the mixture doesn’t combine together into one solid color to be able to keep that fun swirl pattern!
STEP 4: Place ice cream molds on top of a baking tray for easy transferring and pour the mango cherry swirl mixture evenly into ice cream molds (Image 8). Place the molds in the freezer for 2 to 3 hours, or until the bars are completely frozen.

Storage Instructions
Once frozen, store the bars in an airtight, freezer-safe container to prevent freezer burn. I love storing my bars in these plastic popsicle sleeves and sealing them closed with this mini bag sealer, but any type of airtight storage will work!
Tips For Success
- Use a high-powered blender to make sure that the mangoes and cherries are fully blended and smooth. I love using this nutribullet blender. You may have to blend in increments and scrape down the sides while blending. If the mixture is hard to blend, add a small splash of juice as needed.
- Make sure not to overmix the mango and cherry so that it forms the same swirl pattern shown in the photos above. If you don’t mind having a solid-colored bar, you can just blend all of the ingredients together and skip the swirl step!
