Mango Cherry Popsicles

Beat the heat with these easy mango cherry popsicles! Made with real fruits, they're a refreshing and healthy frozen treat for kids and adults alike. Perfect for hot summer days, afternoon snacks, or a fun way to use up extra fruit!

Ingredients

Mango Mixture

  • 2 cups frozen mango chunks
  • 1 cup apple juice 100% with no added sugar
  • 1 tbsp maple syrup optional for added sweetness
  • 1 tsp lime juice

Cherry Mixture

  • 1 cup frozen cherries pitted
  • cup apple juice 100% with no added sugar

Instructions

  • Add the mangoes, apple juice, maple syrup, and lime juice to a high-powered blender and blend until completely smooth). You'll want to blend it well to ensure that all of the mango chunks are fully broken down and smooth. Pour this mixture into a medium bowl.
  • Add the cherries and remaining apple juice to the blender and blend until smooth and no cherry chunks remain. Pour this mixture into the same bowl as the blended mango
  • Use a toothpick or a knife to gently swirl the blended cherries into the blended mango mixture. Be careful not to overmix so that the mixture doesn't combine together into one solid color to be able to keep that fun swirl pattern!
  • Place ice cream molds on top of a baking tray for easy transferring and pour the mango cherry swirl mixture evenly into ice cream molds. Place the molds in the freezer for 2 to 3 hours, or until the bars are completely frozen.

Notes

  • Use a high-powered blender to make sure that the mangoes and cherries are fully blended and smooth. I love using this nutribullet blender. You may have to blend in increments and scrape down the sides while blending. If the mixture is hard to blend, add a small splash of juice as needed.
  • Make sure not to overmix the mango and cherry so that it forms the same swirl pattern shown in the photos above. If you don't mind having a solid-colored bar, you can just blend all of the ingredients together and skip the swirl step!
  • I love using these plastic popsicle sleeves to store these mango cherry popsicles. They seal closed really easily with this mini bag sealer and look like popsicles purchased right from the store!
