STEP 1: In a large bowl, whisk together the applesauce, egg, maple syrup, oil, and vanilla extract until smooth and well combined.

STEP 2: Add the flour, baking powder, cinnamon, and salt directly to the bowl. Sprinkle the baking powder, cinnamon, and salt evenly over the flour so that they distribute well throughout the batter.

STEP 3: Gently stir until just combined. Be careful not to overmix. A few small lumps in the batter are fine.

STEP 4: Let the pancake batter rest for about 5 minutes. The batter should be thick but scoopable. If it seems too thick to spread slightly once added to the pan, stir in 1 tablespoon of water at a time until it reaches the desired consistency. Heat a nonstick skillet over medium-low heat and lightly grease it with oil or butter.

Storage Instructions

Let the cinnamon apple pancakes cool completely before storing them in an airtight container in the refrigerator for up to 3 days. For longer storage, place the cooled pancakes in a freezer-safe container or bag and freeze for up to 2 months. You can place parchment paper between the pancakes to prevent them from sticking together or flash-freeze them in a single layer before transferring them to a freezer-safe bag. Reheat refrigerated or frozen pancakes in the microwave, toaster oven, air fryer, or skillet until warmed through.

    What can I replace the egg with? My child can’t have egg or dairy.

      Hi Amanda! You may replace the egg with a flax egg. To make one flax egg, combine 3 tablespoons of water with 1 tablespoon of ground flaxseed. Let the mixture sit in the fridge for about 15 minutes until it forms a gel-like texture. You could also use a liquid egg replacer like the brand Just Egg. I hope that helps!

    These turned out perfect. Sprayed on even spritz of olive oil spray in pan and cooked on lowest setting on gas stove. They were fluffy and delicious.

    I’ve been feeling more and more guilty as I’ve bent to relying more on processed foods (like pancake mix) to appease my toddlers’ ever increasing pickiness.     Is it possible to add more eggs to the recipe to make it a little more high protein and iron?

      Hi Vianey! Adding in an extra egg would likely affect the overall texture of the pancakes, but if you’re looking to increase iron, you can try adding in a few hemp heart seeds which shouldn’t affect the overall texture.

    Just realizing now though the recipe didn’t say to put the maple syrup in the batter.. oops.. Is the maple syrup supposed to be drizzled on after? Either way, LOVE LOVE LOVE this recipe (and so does my very picky little one!). THANKS!!!
