STEP 1: Line a small sheet pan with parchment paper.

STEP 2: Spread the mixed berries evenly across the bottom of the pan in mostly a single layer in a rectangular shape (Image 1).

STEP 3: In a medium bowl, stir together the Greek yogurt, peanut butter, maple syrup, and vanilla until smooth and creamy (Images 2 & 3).

STEP 4: Spoon the yogurt mixture over the berries and gently spread into a thin, even layer (Image 4).

STEP 5: Add the chocolate chips and coconut oil to a microwave-safe bowl. Microwave in 20-second intervals, stirring between each, until completely smooth. Pour the melted chocolate over the yogurt layer and spread evenly to fully cover the top (Image 5).

STEP 6: Freeze for 3 to 4 hours or until completely firm (Image 6). Break or slice into pieces before serving.

Storage Instructions

Store the yogurt bark pieces in an airtight freezer-safe container in the freezer for up to 2 months. Let it sit at room temperature for 1 to 2 minutes before eating for the best texture.
