Chocolate Berry Bark

Creamy, chocolatey, and packed with juicy berries, this chocolate berry bark is such an easy freezer treat to keep on hand. It has a layer of mixed berries on the bottom, a creamy peanut butter Greek yogurt layer in the middle, and a smooth chocolate topping that hardens in the freezer for the perfect refreshing treat.

Ingredients

  • 3 cups mixed berries ex: strawberries, blueberries, blackberries, raspberries
  • 1 cup full-fat plain Greek yogurt
  • 2 tbsp natural peanut butter
  • 2-3 tbsp maple syrup
  • ½ tsp vanilla extract
  • 1 cup chocolate chips
  • 1 tbsp coconut oil

Instructions

  • Line a small sheet pan with parchment paper.
  • Spread the mixed berries evenly across the bottom of the pan in mostly a single layer in a rectangular shape.
  • In a medium bowl, stir together the Greek yogurt, peanut butter, and maple syrup, and vanilla until smooth and creamy.
  • Spoon the yogurt mixture over the berries and gently spread into a thin, even layer .
  • Add the chocolate chips and coconut oil to a microwave-safe bowl. Microwave in 20-second intervals, stirring between each, until completely smooth. Pour the melted chocolate over the yogurt layer and spread evenly to fully cover the top.
  • Freeze for 3 to 4 hours or until completely firm. Break or slice into pieces before serving.

Notes

  • Pat the berries dry very well before assembling the bark to help prevent excess ice crystals from forming.
  • Use thick Greek yogurt for the creamiest texture. Thinner yogurt can become icier once frozen.
  • Try to keep the berry layer mostly in a single layer so the bark freezes evenly and is easier to break into pieces.
  • Let the bark pieces sit out at room temp for a couple of minutes before serving so that they're not too firm and easier to bite into.
