This peanut butter and jelly French toast takes a classic PB&J to the next level. It’s filled with creamy peanut butter and homemade blueberry jam and dipped into an easy-to-make custard for the perfect breakfast treat!

If you’re PB&J lover but have been looking for a different way to serve up the classic sandwich, these French toast sticks are for you! They’re great to batch-make, freeze, and reheat for those busy mornings and great served on their own or with maple syrup to dip into. They’re made with a homemade blueberry jam, but any type of store-bought jam or jelly can be used.

What You’ll Need

Here is what you’ll need to make this peanut butter and jelly French toast:

  • Peanut Butter: For added flavor and fats, and to help hold the roll together.
  • Jam: You can make a homemade berry jam or use your favorite store-bought variety!
  • Sandwich Bread: Opt for large, soft slices of bread. I like to use soft wheat bread since it is easy to work with and roll up.
  • Egg: Used to firm up the liquids in the bread.
  • Milk: Used to add creaminess to the batter.
  • Cinnamon: Warm spice that adds flavor to the batter.
  • Vanilla Extract: Used to enhance the natural sweetness of the roll-ups.
  • Butter: For pan-frying.

Ingredient Substitutions & Additions

  • Peanut Butter: The peanut butter may be replaced with any other type of nut butter, seed-based butter, or granola butter.
  • Egg: For an egg-free version, replace it with an additional 2 tablespoons of milk or 2 tablespoons of unsweetened applesauce. Make sure to butter the pan well so that the French toast sticks do not stick.
  • Milk: I used full-fat whole milk but you can swap it with dairy-free milk like oat milk.

Step By Step Instructions

Steps to make peanut butter and jelly French toast.

STEP 1: Cut off the crusts from the slices of bread and set aside.

STEP 2: Spread 1 tablespoon of peanut butter on one slice of bread (Image 1). Top this with a second slide of bread (Image 2).

STEP 3: Spread 1 tablespoon of jelly on top of the second slice of bread (Image 3). Top this with a third slice of bread to form a 3 layer sandwich. Slice the sandwich into 4 strips (Image 4).

STEP 5: Heat a frying pan over medium heat and add the butter to melt. Whisk together the egg, milk, vanilla, and ground cinnamon in a medium bowl to form the custard. (Images 5 & 6).

STEP 6: Dip each sandwich strip into the custard mixture until it is coated on all sides (Images 7 & 8).

STEP 7: Shake off any excess batter and cook the strips until golden on all 4 sides (Images 9 & 10).

Storage Instructions

These French toast sticks can be refrigerated for up to 2 days. To reheat, pan-fry on low heat until warmed through or microwave for 15 to 20 seconds, or until warmed through. To freeze, store in a freezer-safe Ziploc bag for up to 2 months. Note, this recipe makes 4 French toast sticks, so I suggest doubling or tripling the recipe to make extra sticks to store!
