Peanut Butter and Jelly French Toast
This peanut butter and jelly French toast takes a classic PB&J to the next level. It's filled with creamy peanut butter and homemade blueberry jam and dipped into an easy-to-make custard for the perfect breakfast treat!

- 3 slices whole wheat bread opt for large, soft slices
- 1 tbsp natural peanut butter
- 1 tbsp blueberry chia jam or jam of choice!
- 1 egg
- 2 tbsp milk
- ¼ tsp ground cinnamon
- ¼ tsp vanilla extract
Cut off the crusts from the slices of bread and set aside.
Spread 1 tablespoon of peanut butter on one slice of bread. Top this with a second slide of bread.
Spread 1 tablespoon of jelly on top of the second slice of bread. Top this with a third slice of bread to form a 3 layer sandwich. Slice the sandwich into 4 strips.
Heat a frying pan over medium heat and add the butter to melt. In a medium bowl, whisk together the egg, milk, vanilla, and ground cinnamon to form the custard.
Dip each sandwich strip into the custard mixture until it is coated on all sides.
Shake off any excess batter and cook the strips until golden on all 4 sides.
- Use soft, large pieces of bread that are easy to slice into strips.
- These roll-ups can be customized with any fillings! Swap peanut butter and jelly for things like mixed berries and jam for a twist!
- These roll-ups pair well with a drizzle of maple syrup or powdered sugar dusted on top for the adults!
