Most banana sushi recipes use a tortilla as the base, but I love using slices of bread! Using bread makes these sushi rolls a fun twist to a classic sandwich that will make lunchtime so much fun! There’s no denying the combo of peanut butter and banana – they pair together so well and when rolled up in a slice of bread make for a sweet and filling meal!

Here is what you’ll need to make this peanut butter banana sushi:

  • Banana: Use a large banana that is ripe, but not overripe. You’ll want the banana to be firm and not mushy so that it keeps its shape and is easy to slice into pieces.
  • Peanut Butter: For added flavor, and fats, and to help hold the roll together.
  • Sandwich Bread: Opt for large, soft slices of bread. I like to use soft wheat bread since it is easy to work with and roll up.
  • Hemp Hearts: Optional add-in for a nutritional boost. I love to sprinkle on a few seeds on top, but you can omit them or sprinkle on any toppings you’d like!

  • Peanut Butter: The peanut butter may be replaced with any other type of nut butter, seed-based butter, or granola butter.
  • Bread: The sandwich bread may be swapped with a tortilla.

STEP 1: Cut off the crusts from the slices of bread (Image 1).

STEP 2: Use a rolling pin to roll the bread slices out to be as flat as possible (Image 2).

STEP 3: Spread 1 tablespoon of peanut butter on each slice of bread in an even layer (Image 3).

STEP 4: Slice the banana in half and place each half on one end of each slice of bread (Image 4).

STEP 5: Roll the banana into a tight log, pressing down on the edge to seal it closed (Image 5). Slice it into 1-inch pieces and sprinkle with hemp heart seeds, or toppings of choice (Image 6)!

Storage Instructions

These rollups are best served fresh, but if you would like to pack them in a lunchbox, try keeping the slices together and still touching so that as little air hits the exposed banana as possible. You may also place some plastic wrap over the pieces in an airtight lunchbox container. The goal is to prevent too much air from hitting the bananas to help prevent browning.
