Pancakes With Pears (Dipped Pear Pancakes)

These pancakes with pears are the perfect fruit-filled breakfast treat! They're egg-free, soft, and fluffy, and have a sweet pear slice right in the center. Serve them up with some berries, a drizzle of maple syrup, or fresh on their own!

Ingredients

  • 1 large pear
  • ½ cup milk
  • 2 tbsp oil/melted butter
  • 2 tsp maple syrup
  • ½ cup all purpose flour
  • 1 tsp baking powder
  • ¼ tsp ground cinnamon

Instructions

  • In a bowl, whisk together the milk, oil/melted butter, and maple syrup until combined
  • In the same bowl add in the flour, cinnamon, and baking powder and mix until a smooth batter forms. It is okay if there are a few small lumps in the batter. Let the batter stand for 1-2 minutes as you prepare the pear.
  • Peel and slice a pear into thin circles. You'll want the slices to be fairly thin so that they fully soften on the pan when cooked. Use a small round object or mini round fruit cutter to cut out the core in the center of each slice to form the rings
  • Preheat a non-stick pan on medium-low heat. If needed, grease the pan with a light layer of butter or oil. Dip each pear ring into the pancake batter to fully coat it and shake off any excess batter
  • Place each coated pear on the pre-heated pan to cook. Once bubbles begin to form on the pancakes, flip them over and cook for an additional 1-2 minutes, or until golden on both sides. Serve with maple syrup or as is!

Notes

  • This recipe pancakes about 8 pear pancake rings. Feel free to double or triple the ingredients for a larger batch!
  • Make sure to thinly slice the pears so that they fully soften when cooked through on the pan. Thickly sliced pears, especially pears that are firm, may result in a chewier pancake center.
  • The secret to perfect even browning on pancakes is to not to grease the pan. If you have a really good nonstick pan, butter or oil isn't necessary to coat the pan with, though cooking in butter does add flavor to the pancakes. I love using this non-stick pan set from caraway home!
  • If you are using oil, make sure to use a mild-tasting oil like avocado oil, extra light-tasting olive oil, coconut oil, or grapeseed oil.
