Orange Creamsicle Popsicles
These creamy orange creamsicle popsicles taste like the nostalgic ice cream truck treat, but made with simple, wholesome ingredients. For Orange Base
- 6 mandarins peeled
- ½ cup full fat canned coconut milk
- ½ cup full-fat plain Greek yogurt
- ¼ cup maple syrup
- 1 tsp vanilla extract
- ⅛ tsp salt
For Creamy Swirl
- ½ cup full-fat plain Greek yogurt
- 2 tsp maple syrup
- ¼ tsp vanilla extract
Add the mandarins, coconut milk, Greek yogurt, maple syrup, vanilla extract, and salt to a high-powered blender and blend until completely smooth. You want the mixture to be completely smooth with no orange chunks or pulp remaining.
In a small bowl, stir together the Greek yogurt, maple syrup, and vanilla extract until smooth
Use a spoon, piping bag, or zip-top bag with the corner snipped off to dollop or drizzle a little of the yogurt swirl mixture onto each popsicle mold Pour the orange base mixture into the molds until about ¾ full. Dollop the remaining yogurt swirl mixture into each mold and use a toothpick or knife to gently swirl it in. Do not overmix so you keep those creamy swirls throughout. Freeze for 4 to 6 hours, or until completely solid.
- Use a high-powered blender to make sure that the ingredients are fully blended and smooth. I love using this nutribullet blender. A super smooth orange base gives you that creamy ice-cream-like bite.
- Use sweet mandarins so that the flavor of the oranges really shines through.
- Do not over-swirl the yogurt mixture. A few gentle swirls are enough to create that creamsicle marbled look.
- Stick with full-fat ingredients. The full-fat coconut milk and yogurt make a huge difference in preventing icy popsicles.
