Greek Yogurt Protein Waffles

These Greek yogurt protein waffles are soft and fluffy on the inside with perfectly golden edges. Made with simple ingredients like Greek yogurt, egg, and maple syrup, they're an easy protein-packed breakfast that the whole family can enjoy!

Ingredients

  • ¾ cup plain whole milk Greek yogurt
  • 1 large egg
  • 2 tbsp pure maple syrup
  • 3 tbsp unsalted butter, melted and slightly cooled
  • ½ tsp vanilla extract
  • 1 tbsp milk
  • ¾ cup all-purpose flour
  • 1 ½ tsp baking powder
  • ¼ tsp salt

Instructions

  • Preheat your waffle maker. If needed, lightly grease the waffle plates with oil or cooking spray.
  • in a medium bowl, whisk together the Greek yogurt, egg, maple syrup, melted butter, and vanilla extract until smooth and combined.
  • To the same bowl, add the flour, baking powder, and salt. Stir until just combined. Be careful not to overmix. The batter should be thick but scoopable. If it seems too thick, stir in a little extra milk.
  • Scoop the batter into the preheated waffle maker. For a 4-inch Dash mini waffle maker, I use about 3 tablespoons of batter per waffle. Gently spread the batter slightly if needed and close the waffle maker.
  • Cook the waffles for about 3.5 to 4 minutes, or until they are golden brown and release easily from the waffle maker.
  • Transfer the cooked waffles to a wire rack and repeat with the remaining batter. Avoid stacking the waffles while they're hot since the trapped steam can cause them to soften.

Notes

  • Preheat your waffle maker before adding the batter. A fully heated waffle maker helps the outside of the waffles begin cooking right away for those golden edges.
  • Add a little extra milk if needed. Greek yogurt brands vary in thickness, so you may need more or less milk depending on the yogurt you use, but the batter will be on the thicker side (see reference photos above).
  • Don't add too much batter to the waffle maker. For a 4-inch mini waffle maker, about 3 tablespoons is a good starting point so that batter doesn't spill out of the sides as the waffle cooks.
  • Waffle makers can vary, so use the cooking time as a guide. The waffles are ready when steam stops releasing, they're golden brown, and they release easily from the plates.
