Servings: 8 mini waffles
Dry Ingredients
- 1 cup all-purpose flour
- 2 tsp baking powder
- ⅛ tsp baking soda
- ¼ tsp salt
Wet Ingredients
- 3 tbsp butter melted and cooled slightly
- 1 tbsp oil
- ½ cup milk
- 1 egg
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- ½ cup finely chopped strawberries
- melted chocolate for dipping or drizzle onto the waffles
In a medium bowl, combine the flour, baking powder, baking soda, and salt.
In a separate large bowl, whisk together the melted butter and egg until completely smooth (this prevents the egg from cooking in the butter and ensures a smooth, evenly combined batter). Then add the milk, maple syrup, and vanilla extract, mixing well until combined.
Add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix.
Gently fold in the finely chopped strawberrries. Let the batter rest while you preheat the waffle iron.
Spoon about 2–3 tablespoons of batter into the waffle maker and cook for about 5 minutes, or until the steam stops and the waffles are golden and cooked through.
Remove the waffles and drizzle with melted chocolate or dip them directly into the chocolate.
- Finely chop the strawberries so they mix evenly throughout the batter. Do not overmix the batter so that the waffles are light and not dense.
- You can add a popsicle stick to the waffle batter while cooking for fun waffle pops!
- Add the chocolate just before serving for the best texture and flavor. If you prefer, you can also stir in 1/4 cup of mini chocolate chips directly into the batter for a similar taste.
- If you prefer a crispier waffle, cook for an extra 1-2 minutes.
