Ingredients

  • 3 slices whole wheat bread opt for large, soft slices
  • 1 tbsp natural peanut butter
  • 1 tbsp blueberry chia jam or jam of choice!
  • 1 egg
  • 2 tbsp milk
  • ¼ tsp ground cinnamon
  • ¼ tsp vanilla extract

Instructions

  • Cut off the crusts from the slices of bread and set aside.
  • Spread 1 tablespoon of peanut butter on one slice of bread. Top this with a second slide of bread.
  • Spread 1 tablespoon of jelly on top of the second slice of bread. Top this with a third slice of bread to form a 3 layer sandwich. Slice the sandwich into 4 strips.
  • Heat a frying pan over medium heat and add the butter to melt. In a medium bowl, whisk together the egg, milk, vanilla, and ground cinnamon to form the custard.
  • Dip each sandwich strip into the custard mixture until it is coated on all sides.
  • Shake off any excess batter and cook the strips until golden on all 4 sides.

Notes

  • Use soft, large pieces of bread that are easy to slice into strips.
  • These roll-ups can be customized with any fillings! Swap peanut butter and jelly for things like mixed berries and jam for a twist!
  • These roll-ups pair well with a drizzle of maple syrup or powdered sugar dusted on top for the adults!
  • Feel free to double or triple this recipe to make enough to freeze for a busy morning!
