Ingredients

  • 1 cup chopped strawberries, divided
  • 1 cup milk
  • 1 tbsp maple syrup or more to taste
  • ¼ tsp vanilla extract
  • 1 cup old fashioned rolled oats
  • ½ cup plain whole milk Greek yogurt

Instructions

  • Add ½ cup chopped strawberries, milk, maple syrup, and vanilla extract to a blender and blend until smooth.
  • Transfer the blended strawberry mixture to a jar or an airtight container. Add the rolled oats and Greek yogurt, then stir thoroughly until well combined.
  • Fold in the remaining ½ cup chopped strawberries. Cover the container and refrigerate for at least 8 hours or overnight so the oats soften and absorb the liquid.
  • Remove the oats from the fridge and stir to combine. If the oats are thicker than you prefer, add a splash of milk to loosen the texture.

Notes

  • Use ripe strawberries. The sweeter the strawberries, the better the flavor.
  • Blend the strawberry mixture well. This ensures the oats absorb the strawberry flavor evenly.
  • Adjust the texture in the morning. If the oats are too thick, stir in a little milk until you reach your preferred consistency.
  • Chop the strawberries into small pieces. This makes them easier to mix throughout the oats.
