Cottage Cheese Pizza

- 1 cup cottage cheese whole milk with 4% milkfat
- 2 large eggs
- ¼ cup all-purpose flour
- 1 tsp Italian seasoning
- ½ tsp garlic powder
- 1 cup shredded mozzarella
- ½ cup pizza sauce
- toppings of choice
Preheat the oven to 400 degrees F (200 degrees C). Add the cottage cheese and eggs to a high-powered blender and blend until smooth. Pour the blended cottage cheese mixture into a medium bowl along with the flour, Italian seasoning, and garlic powder, and mix until combined
Line a 9 by 13-inch baking sheet with parchment paper and spread the mixture evenly into a rectangle on the pan. Bake the crust for 15 to 20 minutes, or until golden and dry to the touch.
Spread the pizza sauce over the crust, leaving a border around the edges. Sprinkle with mozzarella and toppings of choice. Return the pizza to the oven and bake for another 8–10 minutes, until the cheese is melted and golden. Top with grated parmesan cheese and a drizzle of hot honey, if desired. Let it cool for a few minutes before slicing and serving.
- Don't skip the parchment paper! Parchment paper lined on the baking sheet will prevent sticking and make cleanup easier.
- Try your best to smooth out the cottage cheese mixture into an even layer so that it bakes through evenly in the oven. The crust may puff up a bit when it bakes, and this is normal.
- If you prefer to skip the blending step, you can do so, just note that the crust texture will not be as smooth.
