Christmas Cake Pops
These Christmas cake bites are the perfect no-bake treat for the holidays! The cake base is made with 5 simple ingredients and dipped into melted chocolate for a bite-sized sweet treat!

Add the melted butter, maple syrup, and vanilla into a bowl and mix until smooth.
Add the almond flour and oat flour into the bowl and mix until a dough-like texture forms. Let the mixture sit for at least 5 minutes to give the oats a chance to soak up the moisture. The mixture should be thick and easily scoopable.
Scoop out heaping tablespoon-sized portions of the mixture and roll the portions into small balls. Place these balls on a parchment paper lined pan and place this pan in the freezer for 10 minutes so that the balls set. If you choose to make cake pops, insert a cake pop stick into each ball before placing them in the fridge Melt the chocolate in a bowl and set aside. Adding a little coconut oil in with the chocolate chips will help it to melt into a smoother texture. Microwave the chocolate for 30 seconds, adding 10-second increments and stirring in between increments until it fully melts.
Once the cake balls firm up, dip them into the melted chocolate, shaking off any excess chocolate. Immediately add on sprinkles if using to ensure that they stick
Transfer the cake bites to a parchment paper lined pan or to a cake pop stand if using sticks. Place them in the fridge for 5 minutes so that the chocolate shell sets.
- You may use 1/3 cup of coconut flour in place of the oat flour.
- If you are serving these to a young child and prefer not to use chocolate, you can also dip these bites into a thin, smooth yogurt.
- If you want to serve these as cake pops, insert a cake pop stick into each cake ball before setting them in the fridge to set. If you don't have a cake pop stand, you can stick holes in a piece of styrofoam to keep the pops upright.
