Chewy Chocolate Chip Granola Bars

- ½ cup natural peanut butter
- ¼ cup honey
- ½ tsp vanilla extract
- ¾ cup old fashioned rolled oats
- ½ cup crispy rice cereal
- 3 tbsp mini chocolate chips
Add the honey, peanut butter, and vanilla to a medium bowl and stir together until just combined.
Add the rolled oats, crispy rice cereal, and chocolate chips to the bowl and mix until combined and all of the oats and crispy cereal pieces are fully coated. It may seem a little dry at first, but keep mixing until it is well combined
Place the mixture into a granola bar mold or a parchment paper-lined 9 by 5-inch loaf pan. Use the back of a spoon or a spatula to firmly press the mixture into the molds or loaf pan. You'll want to make sure the mixture is firmly pressed to ensure that it holds together. If you'd like, press in a few more mini chocolate chips on top. Chill the bars in the fridge for at least 1 hour. Remove the bars from the mold (or slice into bars if using a loaf pan) and store the bars in the fridge until ready to serve. If you prefer a firmer texture, place the bars in the freezer for a few minutes to firm up.
- If you are making these bars in a granola bar mold, divide the mixture evenly into 8 sections for thin bars, or into 6 sections for thicker bars. If you are using a loaf pan, slice the bars into 7 or 8 pieces. If using a loaf pan, make sure to line it with parchment paper so that the bars are easy to remove once chilled.
- Make sure to use the back of a spoon or a spatula to firmly press the mixture into the granola bar molds or loaf pan. This will ensure that the bars don't fall apart once chilled.
- Let the bars fully chill for at least an hour in the fridge before slicing or removing from the molds.
