Course: Breakfast
Cuisine: American
Servings: 8 rolls
- 1 sheet puff pastry dough
- 1 ripe banana
- ½ tsp ground cinnamon
- ¼ tsp vanilla extract
- 1 egg for egg wash
OPTIONAL GLAZE
- ½ cup powdered sugar
- 1 tbsp milk or water
Preheat the oven to 400 degrees F (204 degrees C).
Mash banana in a bowl with a fork until smooth.
Add in the cinnamon and vanilla and mix until combined.
Spread filling on top of a sheet of puff pastry dough, leaving some space off on the ends.
Once spread out onto the dough, roll it into a log.
Slice the log into pieces and place the pieces on a parchment-lined pan.
Whisk one egg with 1 tablespoon of water to brush on top. Bake for 15-18 minutes, or until golden brown.
- Do not overfill the puff pastry with the banana mixture as it will be hard to roll up and slice into pieces.
- Make sure that your pastry dough is thawed, but not too soft. If it is too soft, it will be difficult to work with.
