Christmas Cake Pops

These Christmas cake bites are the perfect no-bake treat for the holidays! The cake base is made with 5 simple ingredients and dipped into melted chocolate for a bite-sized sweet treat!

Instructions

  • Add the melted butter, maple syrup, and vanilla into a bowl and mix until smooth.
  • Add the almond flour and oat flour into the bowl and mix until a dough-like texture forms. Let the mixture sit for at least 5 minutes to give the oats a chance to soak up the moisture. The mixture should be thick and easily scoopable.
  • Scoop out heaping tablespoon-sized portions of the mixture and roll the portions into small balls. Place these balls on a parchment paper lined pan and place this pan in the freezer for 10 minutes so that the balls set. If you choose to make cake pops, insert a cake pop stick into each ball before placing them in the fridge
  • Melt the chocolate in a bowl and set aside. Adding a little coconut oil in with the chocolate chips will help it to melt into a smoother texture. Microwave the chocolate for 30 seconds, adding 10-second increments and stirring in between increments until it fully melts.
  • Once the cake balls firm up, dip them into the melted chocolate, shaking off any excess chocolate. Immediately add on sprinkles if using to ensure that they stick
  • Transfer the cake bites to a parchment paper lined pan or to a cake pop stand if using sticks. Place them in the fridge for 5 minutes so that the chocolate shell sets.

Notes

  • You may use 1/3 cup of coconut flour in place of the oat flour.
  • If you are serving these to a young child and prefer not to use chocolate, you can also dip these bites into a thin, smooth yogurt.
  • If you want to serve these as cake pops, insert a cake pop stick into each cake ball before setting them in the fridge to set. If you don't have a cake pop stand, you can stick holes in a piece of styrofoam to keep the pops upright.
