Ingredients

  • 2 slices sandwich bread
  • 2 tbsp natural peanut butter
  • 2 tbsp jelly
  • 1 tbsp flax seeds/coconut flakes

Instructions

  • Remove the crust from the slices of bread and roll them out flat using a rolling pin.
  • Spread a thin layer of peanut butter and jelly on each slice.
  • Roll each bread slice into a tight log and slice into pieces.
  • Sprinkle each piece with toppings (ex: flax seeds, shredded coconut, crushed nuts, sprinkles, etc.) or serve as is!

Notes

  • Use bread that is easy to roll out. Some types of bread break apart easily and would not be ideal for these rollups.
  • I like to use an all-natural peanut butter with peanuts listed as the only ingredient. My favorite type of peanut butter to purchase is the Kirkland brand Organic creamy peanut butter! If you are sending these sandwiches to school, you can swap out the peanut butter for sun butter depending on the school's allergen requirements.
  • I like to sprinkle flax and chia seeds on top of the rollups for added nutrition. You can also sprinkle them with festive colored sprinkles to go with different holidays!
  • These roll-ups can be customized with any fillings! Creamcheese, nutella, cookie butter, etc. are some other fun choices for fillings!
