Apple French Toast Roll Ups

These apple french toast roll ups are a great, simple-to-make breakfast treat! The warm apples and cinnamon flavors are a combo that your little ones are sure to love!

Ingredients

For The Cinnamon Apples

  • 1 large apple naturally sweet
  • ¼ tsp ground cinnamon
  • ½ tbsp unsalted butter
  • ½ tbsp maple syrup optional

For The Roll Ups

  • 4 bread slices
  • 2 tbsp peanut butter/spread
  • 1 egg
  • 2 tbsp milk
  • 3 tbsp unsweetened applesauce
  • ¼ tsp ground cinnamon
  • ¼ tsp vanilla extract
  • unsalted butter for pan frying

Instructions

  • Peel and chop the apples into small pieces. I like to chop them up very well so that they cook quickly and evenly in the pan.
  • Melt the butter in a pan on medium-low heat and add in the apples, cinnamon, and maple syrup.
  • Mix the apples to coat and reduce the heat to low. Cover the pan and let the apples cook for about 10 minutes (stirring often). If your apple mixture seems dry, add in a little more melted butter.
  • Once the apples are softened and cooked, set them aside to cool. You want the apples to be tender, but not too mushy.
  • Remove the crust from the slices of bread and roll out flat using a rolling pin. 
  • Spread a thin layer of peanut butter/spread of choice onto each slice.
  • Add about 1 tablespoon of the cooked apple mixture onto one end of the bread and roll it up into a tight log.
  • Whisk together the applesauce, egg, milk, cinnamon, and vanilla extract to form the batter.
  • Quickly dip the roll-ups into the batter and coat all of the sides. Shake off all the excess batter.
  • Melt butter on a pan on medium-low heat and cook roll-ups until all sides are brown. Slice into pieces and serve!

Notes

  • Use a type of bread that is easy to roll out. Some types of bread break apart easily and would not be ideal for this recipe.
  • The maple syrup is optional for a little more sweetness to the cinnamon apples but can be omitted. If you are choosing not to add maple syrup, make sure to use naturally sweet apples like Honeycrisp or Fuji apples.
  • These roll-ups pair well with a drizzle of maple syrup or powdered sugar dusted on top for the adults!
  • You can slice the cooked logs into small slices to serve "sushi style" or into two large pieces for beginner eaters!
