Peanut Butter Banana Sushi

This peanut butter banana sushi is a great, simple-to-make option for lunchtime! With only 3 ingredients and 5 minutes, you'll have a filling meal ready to serve!

Ingredients

  • 2 slices sandwich bread
  • 2 tbsp peanut butter
  • 1 large banana
  • 1 tbsp hemp hearts optional

Instructions

  • Cut off the crusts from the slices of bread.
  • Use a rolling pin to roll the bread slices out to be as flat as possible.
  • Spread 1 tablespoon of peanut butter on each slice of bread in an even layer.
  • Slice the banana in half and place each half on one end of each slice of bread.
  • Roll the banana into a tight log, pressing down on the edge to seal it closed. Slice it into 1-inch pieces and sprinkle with hemp heart seeds or toppings of choice!

Notes

  • Use soft, large pieces of bread for these sushi rollups so that the slice is easy to roll out without tearing and large enough to wrap around the entire banana.
  • Use a banana that is ripe and not overripe. You want the banana to be firm enough to keep its shape and a mushy, overripe banana will be difficult to slice.
