Peanut Butter Banana Sushi

- 2 slices sandwich bread
- 2 tbsp peanut butter
- 1 large banana
- 1 tbsp hemp hearts optional
Cut off the crusts from the slices of bread.
Use a rolling pin to roll the bread slices out to be as flat as possible.
Spread 1 tablespoon of peanut butter on each slice of bread in an even layer.
Slice the banana in half and place each half on one end of each slice of bread.
Roll the banana into a tight log, pressing down on the edge to seal it closed. Slice it into 1-inch pieces and sprinkle with hemp heart seeds or toppings of choice!
- Use soft, large pieces of bread for these sushi rollups so that the slice is easy to roll out without tearing and large enough to wrap around the entire banana.
- Use a banana that is ripe and not overripe. You want the banana to be firm enough to keep its shape and a mushy, overripe banana will be difficult to slice.
