Strawberry Cheesecake Rollups

These strawberry cheesecake roll-ups are great for baby-led weaning and can be customized with any fillings for a quick breakfast treat!

Ingredients

  • 2 bread slices
  • 2 tbsp cream cheese
  • 3-4 large strawberries
  • 1 egg
  • 2 tbsp milk
  • ¼ tsp ground cinnamon
  • ¼ tsp vanilla extract
  • unsalted butter for pan frying

Instructions

  • Remove the crust from the slices of bread and roll out flat using a rolling pin.
  • Spread a thin layer of cream cheese on each slice.
  • Thinly slice strawberries, add them to one end and roll into a log.
  • Whisk together the egg, milk, cinnamon, and vanilla extract to form the batter.
  • Quickly dip the roll-ups into the batter until all sides are coated. Shake off the excess batter.
  • Melt butter on a pan and cook roll-ups until all sides are golden brown.

Notes

  • Use a bread that is easy to roll out. Some types of bread break apart easily and would not be ideal for this recipe.
  • These roll-ups can be customized with any fillings! Jams and other spreads are great alternatives.
  • These roll-ups pair well with a drizzle of maple syrup or powdered sugar dusted on top for the adults!
