Ingredients

  • 1 sheet puff pastry dough
  • 1 ripe banana
  • ½ tsp ground cinnamon
  • ¼ tsp vanilla extract
  • 1 egg for egg wash

OPTIONAL GLAZE

  • ½ cup powdered sugar
  • 1 tbsp milk or water

Instructions

  • Preheat the oven to 400 degrees F (204 degrees C).
  • Mash banana in a bowl with a fork until smooth.
  • Add in the cinnamon and vanilla and mix until combined.
  • Spread filling on top of a sheet of puff pastry dough, leaving some space off on the ends.
  • Once spread out onto the dough, roll it into a log.
  • Slice the log into pieces and place the pieces on a parchment-lined pan.
  • Whisk one egg with 1 tablespoon of water to brush on top. Bake for 15-18 minutes, or until golden brown.

Notes

  • Do not overfill the puff pastry with the banana mixture as it will be hard to roll up and slice into pieces.
  • Make sure that your pastry dough is thawed, but not too soft. If it is too soft, it will be difficult to work with.
