Salmon Nuggets

These salmon cakes are a great way to repurpose leftover salmon filets! Everything comes together in one bowl and is lightly pan-fried to form these crisp on the outside, tender on the inside patties!

Ingredients

  • 1 salmon filet
  • 1 egg
  • ½ cup panko breadcrumbs
  • ¼ cup parmesan cheese
  • seasoning spices
  • oil spray

Instructions

  • Preheat the oven to 400 degrees F (204 degrees C).
  • Cube the salmon and season the pieces with garlic powder, black pepper and paprika.
  • Add the breadcrumbs and Parmesan cheese to a bowl and mix until combined.
  • Whisk the egg and dip the salmon pieces into the whisked egg. Shake off the excess.
  • Dip the salmon pieces into the breadcrumb cheese mixture to coat. Press down the breadcrumbs into the salmon so that they stick. 
  • Place the coated salmon on a parchment paper lined pan and spray with oil. This helps to ensure that golden brown color when baked.
  • Bake for 12 minutes or until golden brown.

Notes

  • The salmon nuggets can also be made in an air fryer! If you are cooking them in an air fryer, be sure to spray the patties with a cooking spray so that they have enough moisture to brown well while air frying.
  • Always carefully check salmon pieces for bones. Even ones that are labeled boneless may have hidden bones, so always press down on the pieces and massage them well to scan for any bones.
